Avocado is one of the richest elements in nature containing high levels of omega 3 and antioxidants that are extremely beneficial. This simple recipe calls for a heavy barley stew (hardly any water, only enough to cook) with cumin and smoked salt. In the middle of the “sandwich” there are some black pepper toasted sunflower seeds. Very easy appetizer or in a smaller size could be an hors d’oeuvres. The trick relies on having quality avocados and handling them properly to get a beautiful presentation. On top a couple slices of serrano chili to give it a kick and some lime zest infused oil (to prevent the avocado from oxidizing).
