Whoever said vegan food were just leaves and boring veggies is completely wrong! Here I portray a mix of five different Mexican dishes that follow original recipes but using soy instead of ground beef and fried gluten instead of pork skin. This delicious preparations brought veganism to a different level (at least for me, not only as a customer but as a chef). I learnt to respect this lifestyle!
