Christmas at home means tradition, gathering, family, rituals and lots of hours cooking. There has to be always (and I mean ALWAYS) a turkey (with the family recipe of course), romeritos (a watercress-like on mole sauce with dry shrimp, patoles (this word does not exist, it was invented by my father and it refers to a Spanish stew made of white beans, prosciutto and tomato), cod in a tomato sauce with capers, olives and almonds; and mostly the dry fruit cake (which i am preparing in the picture) with brandy, pineapple juice and pecans (which we usually pair with a nice vintage Armagnac).
