Whomever has been to Mexico (the real Mexico and not only touristy places) will agree with me that here the “light dinner” rule does not apply. Whether it is beef, pork, chicken, fish, crab, or any other protein, tacos are a delicacy that can be enjoyed at any time od the day. Here I portray “tacos al pastor” which are very traditional and simply delicious! The pork is cut in thin slices then marinated in anato seed paste (achiote) and several other aromatic ingredients such as cumin and dried chilies. Clich on the link for the recipe!
