Fun & healthy salads? It’s possible!


Our ancestors, the Australopithecus were vegan, that is a fact. With the centuries we became more and more meat consumers but the truth is that eating salads is a prize for our body! giving our digestive system a break is always very much appreciated.

However we have the wrong idea that salads are boring and tasteless, so here you have some great ideas on how to make your salad more interesting.

Leaves or no leaves?

To have an amazing salad it is not necessary to have leaves.. Yes we all envision salads with lots of lettuce or raw spinach but you can have a delicious salad only with veggies! Try using a cheese grater to great carrot, beetroot and jicama then add a little olive oil and lime juice, salt and pepper and voilá!

Here’s a list of some raw veggies (going beyond the usual ones like cucumber and tomato) which taste amazing in salads, it may sound weird but you must give it a try!

  • Bell pepper
  • Onion
  • Carrot
  • Broccoli
  • Beetroot
  • Celery
  • Garlic
  • Button mushroom

Of course you can always include the “leafy” basics:

  • Iceberg, romaine, butterhead or leaf lettuce
  • Arugula, watercress, endives, radicchio (bitters)
  • Cabbage
  • Chard
  • Escarole (great for texture)
  • Kale

Fruity friends

Do not be afraid of adding fruit into your savory salad, it will add a great flavor to it! Whether it is acidity with some mandarin or some freshness with strawberries, do play around!

I recommend:

  • Green apple
  • Citrus (orange, grapefruit, tangerine)
  • Pomegranate
  • Strawberries
  • Pineapple

Cooked ones

There are several vegetables that cooked and cold will give a great flavor and texture to your salads! Try:

  • Chayote
  • Zuchinni
  • Sautéed mushrooms
  • Beans and peas


To finish your salad, top it with some of these delicious ingredients! If you are vegan just ignore the first three.

  • Cheese
  • Bacon bits
  • Turkey ham
  • Dried cranberry
  • Sultanas
  • Croutons
  • Toasted nuts like almond, peanut, pecan
  • Toasted seeds like pumpkin, sunflower, chia
  • Fresh aromatic herbs like mint, basil, dill
  • Dried aromatic herbs like oregano


There is a world of options on how to dress up your salad. There are dressings with an oil base, cream base, mayonnaise, citrus, vinegar and so on.
